THE ROYAL WAZWAN
"A 36-Course Symphony of Meat and Spices"
To understand the soul of Kashmir, you must taste its history. The Wazwan is not just a meal; it is a sacred culinary ritual. Dating back to the 14th century, this feast was brought to the valley by master chefs from Samarkand during the Timurid invasion. Prepared overnight by a team of cooks led by a Vasta Waza (Master Chef), the traditional 36-course feast is served on a large engraved copper platter called a Trami, shared by four people.
🤲 Traditional Dining Etiquette
Eating Wazwan has strict cultural rules. Guests sit in groups of four on the floor. Before the meal, hands are washed using a portable copper basin called a Tash-t-Nari passed around by attendants. The meal is strictly eaten with the right hand without the use of cutlery, and it is considered disrespectful to waste food or leave the Trami before everyone has finished.
The Signature Dishes of Wazwan
1. Methi Maaz
The feast always begins with this! A savory, finely minced mutton dish flavored heavily with dried fenugreek (methi) leaves to awaken the palate.
2. Seekh Kabab
Minced meat mixed with secret Kashmiri spices, roasted on skewers over hot coals until smoky, tender, and intensely juicy.
3. Tabak Maaz
The Kashmiri equivalent of lamb chops. Ribs are boiled with aniseed and garlic, then shallow-fried in pure ghee until golden and crispy.
4. Rista
Spongy, hand-pounded meatballs cooked in a vibrant red, spicy saffron and chili gravy. Pounding the meat with a wooden mallet is an art form.
5. Rogan Josh
The global ambassador of Kashmiri food. Tender lamb cooked in a fiery red gravy made from Kashmiri chillies and the extract of the Mawal flower.
6. Daniwal Korma
A robust mutton curry simmered with a massive amount of fresh coriander (daniwal), yogurt, and mild spices. It acts as a perfect palate cleanser.
7. Nadru Yakhni
While Wazwan is meat-heavy, no feast is complete without crispy Lotus Stems (Nadru) cooked in a delicate, aromatic white yogurt-based gravy.
8. Gushtaba
The grand finale! Velvety, hand-pounded mutton balls cooked in a rich, complex white yogurt and fennel gravy. Serving Gushtaba signals the end of the meal.
